Ingredients

  • 5–7 medium to large sweet potatoes
  • 1–2 tbsp olive oil
  • 1–2 tbsp agave syrup
  • 1 tbsp vanilla extract
  • Juice of ½ lemon
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 4–5 oz heavy whipping cream (or your choice of dairy-free cream alternative)
  • 4 oz Irish butter, room temperature
  • 1 tbsp brown sugar
  • Sea salt, to taste

Instructions

Supplies:

  • KitchenAid stand mixer or high-powered electric hand mixer
  • Large glass mixing bowl
  • Baking sheet
  • Parchment paper
  • Tongs

Step 1: Clean and Prep

  • Preheat your oven to 375–400°F.
  • Soak and wash the sweet potatoes using a gentle veggie wash.
  • Lay them out on a cutting board and pat dry.
  • Set your butter aside to reach room temperature.
  • Drizzle sweet potatoes with olive oil and agave syrup.
  • Finish with a sprinkle of sea salt.

Step 2: Bake and Glaze

  • Line a baking sheet with parchment paper.
  • Arrange the sweet potatoes evenly across the tray.
  • Bake for 30 minutes, then use tongs to flip each potato.
  • Continue baking for another 30 minutes.
  • The agave will caramelize beautifully, creating a golden glaze on the skins.
  • After 1 hour, pierce each potato with a fork.
  • If tender, they're ready.
  • If still firm, continue baking in 15-minute increments until soft.
  • Remove from the oven and allow to cool slightly.

  • Discard or save skins for other dishes (they’re delicious blended into soups or smoothies).

Step 3: Whip and Smooth

  • Add the peeled sweet potatoes to your mixer bowl.
  • Add room-temperature butter, vanilla extract, lemon juice, brown sugar, cinnamon, and nutmeg.
  • Begin mixing on low speed, slowly streaming in the heavy cream (or your choice of dairy-free cream alternative).
  • Continue whipping 3–5 minutes until completely smooth, airy, and pillowy.
