Savory Ceviche Egg Salad Bowl Recipe
Spicy jalapeño, bright lemon-lime dressing, creamy avocado, and caramelized onions transform this viral egg salad into a high-protein, flavor-packed bowl you’ll crave all week. Perfect for meal prep, post-gym fuel, or a fresh wellness reset.
Ingredients
- 4–5 hard-boiled eggs
- 3–4 garlic cloves, minced
- 1 tablespoon pickled red onions
- 1 sweet onion, thinly sliced
- 1 fresh jalapeño, finely chopped
- ½ cup fresh cilantro, chopped
- 2 teaspoons balsamic vinegar
- Juice of 1 lime
- Juice of 1 lemon
- ½ teaspoon mushroom salt (or your favorite seasoned salt)
- ½ teaspoon black pepper
- ½ avocado, diced
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon Herbs de Provence
- Crushed red pepper flakes (to taste)
- 1 teaspoon chili oil
- 1 teaspoon sea salt
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
Instructions
We always, always recommend properly washing your fruits and veggies before cooking. Just trust us on this!

Step 1: Boiled Eggs
- Bring 1 quart of water to a boil. Add a pinch of sea salt and 1 tablespoon of apple cider vinegar (this helps with easier peeling).
- Add eggs and cook to your preferred texture:
- Soft: 4–5 minutes
- Jammy: 6–7 minutes
- Medium: 8–9 minutes
- Hard-boiled: 10–12 minutes
- Transfer immediately to an ice bath to stop cooking.
Step 2: Caramelized Onions
- Thinly slice the sweet onion. Reserve half for fresh topping.
- In a skillet, heat 1–3 teaspoons olive oil.
- Add half the onion slices and Herbs de Provence.
- Sauté 3–5 minutes until golden and translucent.
Set aside.
Step 3: Ceviche Dressing
- In a bowl, whisk together:
- Fresh lime juice
- Fresh lemon juice
- Balsamic vinegar
- Fresh garlic
- Mushroom salt (Or alternate seasoned salt)
- Black pepper
- Onion powder
- Garlic powder
- Whisk until emulsified.
Step 4: Assemble the Bowl
- Peel and slice eggs (or remove yolks for a lighter version).
- In a bowl, combine:
- Eggs
- Fresh jalapeño
- Cilantro
- Fresh sweet onions
- Caramelized sweet onions
- Pickled red onions
- Chopped avocado
- Pour dressing over and gently toss.
- Finish with chili oil and crushed red pepper flakes.
- Let sit for 10–15 minutes for flavors to develop.
